At the western end of the Philipsburg boardwalk, locally owned, with one drink worth crossing the bay for. The Lay Back Blanc is a Long Island iced tea finished with Prosecco instead of Coke, which sounds like a mistake and is not. The kitchen runs on johnnycakes: a dollar on their own, or as the Johnny Burger with black angus beef served on one instead of a bun. Satay, a mahi sandwich and a jerk chicken and rib combo fill out the rest. It is a seven-dollar round-trip water taxi from the cruise pier and a short walk from where the boat lands. One thing worth knowing: the posted hours say daily, but regulars report it closing on days when no ships are in port. Check before you commit to the crossing.
Worth pairing with the rest of beach bars across Sint Maarten.
