Dutch Blonde is on the second level, which is why people walk past it, and the ones who look up get the best view on the boardwalk. The Dutch half of the island shows up properly on the menu: enormous pancakes that defeat most single diners, Indonesian peanut satay by way of the old colonial route, and a cheese and wine tasting the owners run themselves rather than handing off to staff. That last part is the reason to book rather than wander in. Ten to seven on weekdays, eleven to seven on Saturday, closed Sunday. It is more restaurant than shack, but the water is a step away and nobody minds sand. Look up, then go up.
Worth pairing with the rest of beach bars across Sint Maarten.
