Hemingway sits directly on the sand at LionsDive Beach Resort, next door to Chill and its driftwood forest, and it runs on a schedule you could set a watch by. Friday evening is Tico Roberto and friends. Sunday evening is Los Compadres. Both start at eight, and both play to a room where almost nobody is wearing shoes. Happy hour lands Wednesday, Friday and Sunday from half past five to half past six, which is roughly enough time to get settled before the band starts. The doors open at seven in the morning for the breakfast buffet and do not close until midnight, so the same stretch of sand handles coffee, lunch platters, sunset drinks and dinner under the stars. The water is a few steps away and sheltered by natural break waters, so it stays calm.
